Ingredients
For the Berry Filling:
- 7-8 cups mixed berries (strawberries, raspberries, blueberries, and/or blackberries)
- 3 Tbsp maple syrup
- 2 Tbsp arrowroot starch (or cornstarch or gluten-free flour)
- 1 Tbsp lemon juice
For the Crisp Topping:
- 1 cup almond flour (or almond meal)
- 2/3 cup shredded or desiccated coconut (or sub with almond flour or rolled oats if you prefer grains)
- 1/4 cup coconut sugar (or organic cane sugar)
- 1/2 tsp sea salt
- 4 Tbsp coconut oil or vegan butter (melted)
- 2 Tbsp maple syrup (optional)
- Optional: 1 cup roughly chopped pecans or other nuts of choice
Instructions
- Preheat Oven: Preheat your oven to 350°F.
- Prepare the Berries: Add the mixed berries to a 9x13-inch baking dish. Drizzle with maple syrup, sprinkle with arrowroot starch, and add the lemon juice. Toss everything together until the berries are evenly coated.
- Make the Crisp Topping: In a large mixing bowl, combine the almond flour, shredded coconut, coconut sugar, and sea salt. If using, add the chopped nuts (if using). Stir well. Add the coconut oil or vegan butter and mix until the topping is evenly distributed. Taste the mixture and adjust the sweetness by adding more coconut sugar or a little maple syrup if desired.
- Assemble the Crisp: Evenly spread the crisp topping over the berry mixture in the baking dish.
- Bake: Place the dish in the center of the preheated oven and bake for 40-45 minutes, or until the fruit is bubbling and the topping is golden brown.
- Cool and Serve: Allow the crisp to cool for about 10 minutes before serving. Enjoy it on its own, or pair it with coconut whipped cream or coconut vanilla ice cream.
- Storage: Store any leftovers covered in the refrigerator for up to 4 days.
